The tony, 40-seat spot closed earlier this week to enable installation of carpet and a proper four-seat chef's counter, which gives guests a "complete" view of the kitchen. HILLSBORO—The operators of CA-based chain Veggie Grill weren't kidding about their rapid-expansion plans for Portland: Veggie Grill's third local outpost in less than a year will open this Monday (November 19) at Tanasbourne Village in Hillsboro.
