As promised, chef Caleb McBee is returning to his bar-managing roots with the upcoming debut of the Tannery Bar, the new concept taking over McBee's Skin & Bones Bistro space. Skin & Bones, which shuttered after a year in business, featured McBee's NW take on a Parisian bistro; in contrast, the Tannery Bar — catch a sneak peek here — promises the atmosphere of a "neighborhood bar," with inspiration from McBee's famous days as proprietor of the Pearl's experimental cocktail bar Apotheke. To achieve the look, Skin & Bones's seating becomes streamlined — with two large communal tables replacing four-top cafe tables; bar-top seating along the front windows; and the wide open-kitchen counter (where McBee once butchered whole pigs) is transformed into bar seating. The space also gets a new counter, back bar, an industrial work table/wine rack, and a "DJ zone" complete with turntables and LPs at the ready.
Per an email, McBee writes that "we'll be serving craft spirits, cocktails, beer, wine, and delicious small plates in our cozy, lamp-lit bar" — though no official food menu is availabe yet. The Tannery Bar officially opens to the public Monday, November 19. Hours of operation: 4p.m. to 1a.m., Monday through Saturday.
