Over at the Oregonian, Thistle chef/pig-fight guy Eric Bechard speaks at length about his upcoming Portland restaurant Roosevelt. On the "wild game" concept: "Basically it's the same as farming, just utilizing wild animal breeds in place of something like a cow or a pig. We're playing around with some Roosevelt elk, Oregon fallow deer, wood pigeon, grouse, quail, pheasant... The idea is to get back to heritage breeds, which are much closer to the wild species."
