Welcome to Eater Cocktail Week 2012: Let's Drink.

Ladies and gentlemen, Eater readers of all ages 21 years of age and older, please inch a little closer to the computer screen for a special announcement. Starting right now, Eater's throwing down for our first-ever Eater Cocktail Week, a celebration of all things craft cocktail. In line with theme weeks past, expect check-ins throughout the week with some of Portland's best bartenders, guides to the city's top watering holes (whether for brunch cocktails or a true dive-bar experience), intel about the best hangover cures, and much, much more.

And that's not all. In celebration of this auspicious endeavor, Eater asked five if Portland's top bars to shake up a lil' somethin' somethin' just for us (and our readers) — and these special Eater Cocktails will be available at the bar all this week. Each day, we'll highlight a different boozy creation, but below, a quick guide to the off-menu drinks you can find this week only.

The Bent Brick: Bartender Connor Mansager demands that Portland "Bring Back the Sunshine" with a cocktail that imitates Pisco: the light, floral drink features Clear Creek grappa, ground cherry schrub, and red verjus (the juice of unripened grapes).

Laurelhurst Market: Eric Nelson offers a "rich and decadent... but very adult" version of a malted milkshake. The "Farewell to Paris" features Fernet Vallet, whiskey, Kahlua, and Amontillado sherry shaken with a scoop of vanilla ice cream (finished with sprayed absinthe), then topped with Coca-Cola.

The Whey Bar: At the Ox sister bar, bartender Jamal Hassan shakes up a "Tijuana Monk," in which Benedictine plays with Reposado tequila, egg, and lime juice.

KASK: Kask bartender Mark MacMinn offers his "Southern Exposure," with Pisco, Clear Creek pear brandy, egg white, lime juice, agave syrup, and Fees Old-Fashioned bitters.

Barwares: At the boozy companion to chef Johanna Ware's Smallwares, Taylor Gehrts serves up "The Eater," a drink featuring sherry, reposado tequila, Bonal, demerara sugar, and whole egg, served up with grated nutmeg.
