Barwares' Taylor Gehrts Goes Savory with Sherry

In celebration of Eater's first-ever Cocktail Week, bartenders at five PDX hotspots agreed to shake up a special Eater Cocktail, just for us (and you — they're available on the menu all this week). Every day we'll highlight a new creation... today, we check in with Barwares' Taylor Gehrts.

Northeast Portland's eat/drink duo of Smallwares and Barwares is known for its "inauthentic" Asian flair, so why not bring in some Spanish wine to shake things up? For Barwares' Eater Cocktail (delightfully named "The Eater"), the team looked to a recent sherry tasting for inspiration. "We were looking to add sherry to our list, and then thought it would make a great fall cocktail," says Smallwares chef Johanna Ware. To craft the drink, bartender Taylor Gehrts (an alum of Nostrana) mixes Amontillado sherry, reposado tequila, Bonal aperitif, and demerara sugar with a whole egg, allowing the full-bodied sherry and oak-aged reposado to mingle. "We liked the savory note that the sherry and tequila have together," Ware says.

And because 'tis the season, the drink gets a sprinkle of ground nutmeg on top in a "nod to eggnog." It's available on the Barwares menu all this week for $10.
