And now, a peek inside E. Burnside's cicchetti-fueled Bar alla Bomba, which celebrated its official grand opening last night in the space that most recently housed the Guild Public House. According to owner Christopher Ashley, Bar alla Bomba takes its inspiration from Venetian bacaros, with the focus on Italian cocktails, wine, and a 16-item tapas (cicchetti) menu by chef Ethan Flom, an alum of Broder and Savoy. (Highlights include whipped salt cod; bay shrimp with grilled eggplant; and baby octopus in a black squid ink sauce.) Other snacking options include five paninis (like a wild boar sausage with red pepper and goat cheese) and tramezzinis, described as "rolled sandwich made with Italian flatbread" — which can be paired with a lengthy cocktail and aperitivo menu.
Though Ashley notes that a new bartop is still in progress, Bar alla Bomba is open now, serving lunch five days a week and late-night daily. Hours: 10a.m.-midnight, Monday to Wednesday; 10a.m.-2a.m., Thursday & Friday; 2p.m.-2a.m., Saturday; 2p.m.-midnight, Sunday.
