Chef and partner Daniel Mondok has left his post at Paulée, the celebrated wine country restaurant in Dundee, Oregon. Paulée debuted in May 2012 as a collaborative effort between Mondok and sommelier Brandon Tebbe, with an ambitious goal to source all produce from the restaurant's own acreage.
Sean Temple, of Alu fame — and who assisted in shaping the vision for Paulée with Mondok as chef de cuisine — has been promoted to executive chef. As for Mondok's (best known for his stints at Sel Gris and Genoa) future? According to Paulée publicist Melissa Broussard: "Daniel is pursuing his next step." More as it becomes available.
