Another brick-and-mortar spot is on the horizon for KOi Fusion's Bo Kwon: WWeek reports that Kwon has purchased the former Stadium Flowers building (in front of Jeld-Wen Field on W. Burnside) to build an indoor dining area that will "one day house a kitchen." The Stadium Flowers parking lot usually welcomes one of Kwon's KOi Fusion trucks during late-night hours, and according to Kwon, the truck will function as the primary prep space for at least a year, "because I can't afford to build a kitchen yet." WW reports that a liquor license and bar are also among Kwon's plans for the space.
In addition to a fleet of roving trucks, KOi currently operates four permanent locations: Brick-and-mortar kiosks in downtown Portland and the Bridgeport Village shopping center, and two parked trucks in the D-Street Noshery and Mississippi Marketplace cart pods. No timeline yet for the W. Burnside dining room.
