Chef Vitaly Paley takes competition seriously: The Paley's Place chef/owner (who famously ran several "practice runs" before filming his episode of Iron Chef America) is similarly preparing for this year's Cochon 555 event with several pork-centric dishes popping up on his restaurant menu. Among them: Southern-style smoked pork loin served with Cuban black beans and crispy pig skin; pork liver terrines with swiss chard and bacon; and a sweetbreads, pork kidneys, and bacon dish served with mustard sauce. (The dishes aren't necessarily what Paley will be serving during Cochon, but they hint that the man's obviously running some serious dress rehearsals.)
