Wafu's Trent Pierce Planning New Seafood Concept

Downtown is the new SE Division. The Oregonian has first word that Trent Pierce, chef/owner of SE noodle bar Wafu, is looking to return to his seafood roots with a second restaurant in downtown Portland. Pierce, whose lauded seafood restaurant Fin shuttered in February 2011, is still in the planning stages for the as-yet-unnamed restaurant, though according to the O, the spot — which has the backing of investor Ben Blank — will not simply be a Fin 2.0.

Pierce's plans represent yet another high-profile chef looking to move downtown: Last week, it was revealed that Beast's Naomi Pomeroy was eyeing a space in the West End (a stone's throw from chef Chris Israel's upcoming taco concept), while fellow seafood chef Ken Norris committed to a Pearl District space for his spot Riffle NW.
