According to an email blast, Wafu chef Trent Pierce is scouting locations in the Pearl District for his previously announced return to seafood. Pierce, whose short-lived but celebrated seafood restaurant Fin shuttered in February 2011, writes that the new downtown concept will mark a return to modern, refined techniques. "I'm passionate about Wafu because we're able to do things there that are accessible and at a price point that speaks to a broader audience," Pierce writes. "Wafu is very fun and in-your-face, this new concept is definitely a more refined experience."
Pierce has also announced a monthly dinner series that will offer previews of the seafood restaurant menu — the first, scheduled for April 12 at Wafu, will feature a "multi-coursed seafood menu" with wine pairings by St. Jack GM/sommelier Joel Gunderson. Pierce's as-yet-unnamed restaurant is vaguely set to open sometime "later this year."
