When ChefStable empire builder Kurt Huffman took over the West End's former Pinot American Brasserie site in December 2011, he announced plans to turn half the space into a site for special dinners, culinary classes, and chef collaborations. And today, the Oregonian reports that the downtown event space — which takes up part of the colossal site that will soon also be home to Chris Israel's Corazon — has set its inaugural event.
Kind-of-a-big-deal Italian butcher Dario Cecchini (known in his native Tuscany as "the Butcher of Panzano") will lead a whole-hog butchery demonstration during the space's grand opening celebration on April 17. The event (open to ticketholders only which is not open to the public) sees the eccentric Cecchini also demonstrating some of his signature dishes, and after the hog breakdown, Cecchini will occupy the kitchen of SE Morrison's Nostrana — whose chef/owner Cathy Whims is affiliated with ChefStable — for a special prix fixe pork dinner, using the animal that help christen the event space.
