Watch PMC Founder Camas Davis' Wüsthof 'Portrait'

As the Oregonian previously reported, Portland Meat Collective founder Camas Davis (a former Portland Monthly food critic) is the one of the butchers featured in a new ad campaign for schmancy knife manufacturer Wüsthof — and the new spokeswoman does more than hold up a cleaver for photo shoots. In the multimedia campaign, Davis has been dubbed the "Poet" of butchery, complete with a how-to video for butchering chicken and a dreamy "portrait" video that's heavy on Oregon mist, whole-hog butchery, schmancy knives, and oh hey, Powell's.
