Portland Monthly brings the scoop that Ruby Jewel co-owners Lisa Herlinger-Esco and Becky Burnett will soon open their second scoop shop in the West End, across the street from Chris Israel's upcoming Corazon restaurant.
According to PoMo's Allison Jones, the 1,600-square-foot shop will occupy the former Betty Ford Lounge space on SW 12th, offering a full soda fountain with counter seating and communal tables. Also on tap: the launch of "a line of candy made in house — think marshmallows, house made fluff, candied nuts, brittles, toffees, and sauces to deck all those sundaes."
Herlinger-Esco and Burnett launched their line of Ruby Jewel ice cream sandwiches in the Portland Farmer's Market in 2004, finally opening an anticipated brick-and-mortar location on N. Mississippi in July 2010. Projected opening for Ruby Jewel Scoops downtown: June 2012.
