As some astute observers have noted, the Pearl's new haute seafood spot Riffle NW is offering a burger on its late-night menu — for an eye-opening $17 a pop (eye-opening by Portland standards, anyway). So for those curious, an almost-$20-burger breakdown: It features a blend of short rib, chuck, and trimmings from a 42-day dry-aged prime sirloin and ribeye; and is served on a brioche bun with Roquefort.
