Monday bombshell alert: The Oregonian reports that Philippe Boulot, the James Beard award-winning culinary director of downtown's Heathman Restaurant, will leave the restaurant he's been associated with for the past 18 years. Boulot, who began doing double-duty as the executive chef of the Multnomah Athletic Club in 2008, told the O that "I could not put my name on [current Heathman executive chef Michael Stanton's] work anymore," and hints at philosophical differences with the Heathman's newish owners, the Texas-based Landry's Inc. (which also famously owns McCormick & Schmick's):
It's a different job from when I took it," he says. "There's a new company that bought it. They are very sharp financially. It's not the free-spirit type of world that I like to work for.
Boulot will continue to work on the MAC's previously announced restaurant revamps. More information as it becomes available.
