ChefStable's Market to Debut July 30; Menu Details Here

Market's set its street date. The ChefStable project — which takes over downtown's former Carafe Bistro space — will debut next Monday, July 30, after a two-month renovation that expanded the dining room into a 100-seat space.

As previously reported, chef Troy Furuta's menu (which will change bi-weekly) highlights Continental cuisine during a weekday lunch and nightly dinner service. Expect plated dishes like a pan-roasted salmon darne with Thai basil, hearts of palm, Persian cucumbers, and Charleston gold rice; bucatini with ground bacon and Balinese long peppercorn; grilled game hen with warm panzanella salad; and pasta with rabbit, broccoli rabe, and Dijon cream. "Bar bites" like waffle fries and risotto croquettes pair with the cocktail menu, by Wafu alum Alan Akwai. And as with many other ChefStable projects, preview dinners will be held during the first week of operation, offering three courses for $30 (with an optional $15 wine pairing). Stay tuned for an Eater Inside look as opening approaches.
