Chef Rick Gencarelli has made good on his meaty promise. The chef, who relocated to Portland specifically to open his own brick-and-mortar restaurant, traded in his Good Food Here-parked food cart earlier this year to build the Lardo sandwich shop, which flings open its doors today. The project — backed in part by Kurt Huffman's ChefStable — features Gencarelli's familiar, meaty menu (of pork belly banh mis and porchetta-and-gremolata sandwiches) paired with an impressive 14 beers on tap. As promised, the brick-and-mortar menu sees a mini-expansion with the addition of two salads and the return of the cart's popular "dirty fries" (aka fries topped with pork and peppers).
And though it's not parked yet, plans are still in the works to move Kir Jensen's dessert cart Sugar Cube to the outdoor parking lot, creating the sweet complement to Gencarelli's savory sandwiches. Lardo's hours of operation moving forward: 11a.m. to midnight, seven days a week.
