The big dance is still five weeks away, but local meat purveyor Nicky USA has announced it's upping the ante for its annual Wild About Game cook-off, set for Sunday, September 9. This year, the competition will pit four familiar Portland chefs in direct head-to-head battles with four Seattle-based chefs — as well as offer guests the opportunity to attend a "grand finale dinner" featuring five gamey courses and a cocktail hour.
In the culinary competition, Jenn Louis (Lincoln) will take on Cormac Mahoney (Madison Park Conservancy); Chris Israel (Gruner) faces off against Johnathan Sundstrom (Lark); Chris Carriker (Gilt Club) goes head-to-head with Carrie Mashaney (Spinasse); and Gregory Gourdet (Departure) battles it out against Nathan Lockwood (Altura). The dinner — for an additional $150 reservation, inclusive of wine pairings — features dishes like a water buffalo carpaccio with duck heart confit; sous vide elk with bread dumplings and black trumpet mushrooms; and foie gras truffles with cocoa nibs.
