Among them, Matthew Lightner, whose NYC spot Atera is famously tasting-menu-only: "I do think the majority of the people that come to these restaurants know what they're in for. They struggle to get a reservation and they make an evening out of it. They're not being forced to do that, because there are tons of wonderful à la carte places out there for them." [Eater National]
