The folks behind Killer Burger are heading to the Southwest for their new concept. According to a KB spokesperson, Hatch will offer Southwest and Southern comfort foods downtown, in the space recently vacated by Morning Star Cafe.
Owners Mark McCrary, TJ Southard, and Robert Spencer plan to offer breakfast, lunch, and dinner in the 90-seat space, highlighting braised meats, a fresh salsa bar (with a dedicated "salsa chef"), and a full bar that will be "majoring in rum, minoring in tequila." The food menu will focus on authentic Southwestern recipes like carnitas, chipotle-braised beef, and a take on Jamacian jerk chicken, with many dishes showcasing an "oven-to-table" philosophy with cast iron and ceramic cazuela cooking.
Killer Burger currently has three locations in the Portland area — Hollywood, Sellwood, and Vancouver — and an additional location in Bingen, WA. Projected opening date for Hatch: March 1. More as it becomes available.
