With this week's news that two food carts — Brunch Box and El Cubo de Cuba — are planning brick-and-mortar restaurants, we thought it'd be a good time to check in on the still-burgeoning cart scene. So this week's topic of discussion: What's the one food cart dish you can't live without? Whether it's all well-known slinger of big-ass sandwiches or khao man gai, or an under-the-radar taco spot out on 82nd, give it a shout — along with why it's your one-and-only must-have dish.

As per usual, we'll compile the comments left here and sent into the tipline into a handy map that will hopefully act as a must-visit food cart guide for Portland.
