Lines are certainly wrapped around its building right this very second, but here now, a look at the calm before the storm at Micah Camden's holy anticipated Boxer Ramen, inside the Union Way retail alley. After nearly a month of test dinners and soft openings to fine-tune the menu, Camden and co-owner Katie Poppe reveal the official opening menu at the 30-seat spot: Like the limited menu of Little Big Burger, Boxer Ramen keeps it simple.
The ramen joint highlights just two kinds of broth — a tonkotsu-shoyu and a spicy miso — both featuring noodles from the Sun Noodle Company, which makes noodle products for famed ramen joints like NYC's Momofuku and LA's Ramen Tusjita. Side dishes will rotate, but may include dishes like ohitashi spinach salads, Japanese pickles, pork belly buns, and something tantalizingly called "okonomiyaki tots." Boxer Ramen makes things official tomorrow, November 1, but first, take a look inside:
