The salami-slingers at Olympic Provisions have signed their first cookbook deal: Eat Beat reports that salumist Elias Cairo and the OP crew will team with lauded cookbook author Meredith Erickson (most recently, co-author of Le Pigeon: Cooking at the Dirty Bird) in a deal with Ten Speed Press. Plans are for a 300-page book that's part cookbook, part travelogue of sorts, with pages that chronicle Cairo's European apprenticeships and "take[s] readers on gastronomic misadventures around Oregon." Among the book's 80 recipes will be an entire chapter devoted — surprise! — to charcuterie.
After a flurry of Portland cookbooks hit shelves this fall, looks like the trend will continue: The Country Cat's Adam and Jackie Sappington are currently at work on Heartlandia (release date TBD); the as-yet-untitled OP book already has a release date: fall 2015.
