Pearl District denizens will soon have a "salad-centric" grab-and-go option for their daytime lunches. Restaurateur Christopher Handford (of Old Town's Davis Street Tavern and the Pearl's jamison) will open Garden Bar Salad Co. in the space most recently home to the short-lived Morso/Mio Gelato revamp.
According to Handford, the spot will offer signature salads (like an "Oregon Cobb" with romaine, grilled avocado, coppa, tomatoes, and Rogue Creamery blue cheese; and a "Vegan Protein" with lemon-rosemary tofu, spinach, roasted beets, sweet potatoes, and quinoa), in addition to a create-your-own option for guests looking to customize their salad bowls. "All the produce will be seasonal and locally sourced," Handford says. "Think 'slow food done fast' and/or 'farm-to-go.'" To match the greens on the plate, the space will undergo a makeover by Bamboo Revolutions, and Garden Bar plans to partner with local container service GO Box for reuseable to-go containers.
