It seems that longtime local chef Kenny Giambalvo has taken on the position of executive chef at McMenamins Edgefield's Black Rabbit Restaurant where, word is, he has completely revamped the menu for the Troutdale, Ore. eatery. (A look at a recent menu reveals dishes like horseradish-crusted salmon with caviar and pan-roasted duck breast.)
This is just the latest venture for the ever-moving Giambalvo — he spent more than a decade as the executive chef at Bluehour before moving on for a stint opening casual spot Morso — and an even shorter stint in the kitchen at North Williams Italian restaurant Oro di Napoli. Although his new position is noted on McMenamins Edgefield's Facebook page, the hire is still fresh enough that it has yet to be noted on official McMenamins website.
