Serious Drinks gets a close look at bar manager Chauncey Roach's cocktail list, which includes a few "trompe l'oeil" touches — cherries garnishing a Manhattan are actually "balled granny smith apples cooked sous vide with pomegranate juice" and Maraschino liqueur; the olive in the martini is a mix of "olive purée, olive oil, and pickle juice" added to agar, and meant to burst in the mouth when bitten.
