Cheesemonger Sasha Davies, of Cyril's at Clay Pigeon Winery, borrows a page from farm- and butchery-CSA programs with the recent launch of her "Community Supported Cheese Club." Just like a butchery CSA that divvies up a large animal, members of the club each pledge to purchase one pound of the month's selected wheel-of-cheese. Participation is flexible (and if not enough members sign up for a pick, the club skips a month at no charge to any members).
