The rumors are true: The Oregonian has confirmed that Lardo chef Rick Gencarelli will indeed team up with ChefStable to open a pasta restaurant, in the same West End building that houses his newest Lardo outpost. According to the O, the casual, counter-service Grassa will offer Gencarelli's take on fresh pasta like salt cod ravioli, ricotta gnudi with lamb bolognese, and spring pea agnolotti at an inexpensive price point:
"The choices, currently, are between a fine-dining restaurant, where it's going to run you $18 for an appetizer-sized portion, or a super family-style place. Grassa's going to be in the middle. It's got all of the elements you'd find in a pasta in a fine-dining environment, but in a fun, casual, inexpensive way."
As previously surmised, the location will be nestled in between Gencarelli's Lardo West restaurant and the recently opened Racion, in the space formerly known as Corazon. Projected opening: six weeks.
