Presenting the Chile-Packed Chorizo Burger at Xico

As part of Eater's Burger Week, chefs at five Portland restaurants that are a tad burger-phobic agreed to make a special Eater Burger that will be available on their menus all this week. Every day we'll highlight a new off-the-menu creation, and first up: Xico's Kelly Myers.

When asked to dream up an Eater burger, Xico chef Kelly Myers found inspiration from the spot's torta-fueled lunch and happy hour menus. "Tortas vary, but they are always substantial and pack a big punch of flavor," Myers says. "It was fun to come up with a torta that eats like a burger." Myers' Eater Burger thus features a one hundred chile red chorizo "patty" topped with poblano chile rajas (chiles roasted and marinated with lime, onion, and Mexican oregano), grilled yellow potatoes, and melted Meunster cheese. The burger is then assembled on a telera roll with chile de arbol mayo, pickled red onions, and a salsa cruda of tomatillo, cilantro, and serrano chile.

The Xico burger is available for $11 all this week on the lunch, happy hour, and dinner menus, while supplies last.
