Is Omission Brewing's beer "gluten-free" or "gluten-removed"? Sound like just semantics, but Omission's parent company Craft Brew Alliance Inc. (which owns Widmer Bros. and Kona Brewing, among others) is fighting federal alcohol regulators for the right to call its beer "gluten-free." Unlike other celiac-friendly beers brewed with sorghum, Omission brews its product with the usual barley, then later adds an enzyme the breaks down gluten. Though the process improves the taste, "it also, scientists say, leaves tiny gluten fragments behind." The Oregonian brings the full story. [OregonLive]
