Chef Matt Lightner, once of Portland's Castagna, now of NYC's Michelin-starred Atera, names the 10 dishes that "made his career." Unsurprisingly, several items from his stint at Mugaritz make the cut, as does one from Castagna: the iconic wild ginger sundae. Says Lightner: "When I moved back to Oregon, I wanted to rediscover local products and do something unique — I felt like everyone was doing the same thing." [FWF]
