It's a busy season for Portland cookbooks, and now, Eater National has the first look inside Gabriel Rucker's hotly anticipated Le Pigeon cookbook (full title: Le Pigeon: Cooking at the Dirty Bird). Le Pigeon was co-authored by Meredith Erickson, who also helped write the Joe Beef cookbook, and similarities between the two pop up: "Both contain seemingly tangential asides... that prove essential to completing three dimensional portraits of each restaurant. "
Also: recipes that involve a lot of foie gras, an entire chapter devoted to tongues, and wine-pairing tips from Le Pige GM Andy Fortgang.
