It's already the case in Portland, but could food trucks replace fast food nationwide? Fast Company reports that of 40,000 food truck customers surveyed, 50 percent report they would have patronized a fast-food restaurant if the cart wasn't there, but 20 percent said "they would haven't gotten anything at all."
