Olympic Provisions branched out with its NW Portland meat-curing facility in 2011, but now, they're about to go big in a huge way: Eat Beat reports that salumist Eli Cairo and crew will soon move operations into the 33,000-square-foot "Tazo Tea building." (The Tazo tea corporation moved production to Washington earlier this year.)
As PoMo notes, the new manufacturing facility could as much as quadruple OP's current output from 5,000 pounds of meat per day to 20,000 pounds, allowing OP to rival large American charcuterie brands. Also on-tap for the expanded OP: "large-format" meats, smoked meat sticks, and chicken products. More as it becomes available.
