The iconic wings at Pok Pok get the "Eater Elements" treatment over at Eater National, in which Andy Ricker explains the inspiration, ingredients, and five essential elements behind the "umami overload." In the piece, Ricker gives props to onetime neighbor and Pok Pok employee Ich Truong (for whom Ike's Vietnamese Fish Sauce Wings are officially named), and reveals that most wing-eaters don't eat their vegetables.
