WWeek brings first word of a chef shake-up in the sushi scene: Hokusei's opening sushi chef Kaoru Ishii (a Tokyo native an alum of Matsuhisa in Beverly Hills) moved to the Pearl District's Yama Sushi apparently at the end of July.
