Last night on Top Chef New Orleans, the brave contestants had to make a twist on traditional étouffée for chef John Besh. Then in the Elimination Round they had to cook two different kinds of local seafood. There was grumpiness about mistreated knives, people allergic to seafood, and a visit to Besh's house.
