Seattle's Bill the Butcher Chain Expanding to Portland

Need more meat? Seattle-based sustainable butcher shop Bill the Butcher has announced plans for a Portland expansion, promising as many as 10 retail shops in PDX. According to a press release, Bill the Butcher owner/founder J'Amy Owens will partner with local investor Erick Paulson to bring her brand of "reinvented neighborhood butcher shops" offering grass-fed beef, pasture-raised pork, and other organic meat products. (A look inside the shop's deli counter reveals items like meatballs by the pound; bacon, jalapeno, and cheddar-stuffed hamburger patties; and quarts of house-made stock.)

Bill the Butcher was founded in 2009, and currently has six Seattle-area locations (with the seventh currently under construction). No word yet on the Portland neighborhoods targeted or potential timeline; more as it becomes available.
