Canlis Searches for New Chef; Tom Douglas to Open New Mexican Restaurant Downtown

Welcome to CascadiaWire, a weekly collection of restaurant news from up-and-down the Pacific Northwest corridor.

Canlis
DOWNTOWN -- Seattle chef Tom Douglas has announced plans to open a 40-seat Mexican restaurant at The Martin Apartments downtown. It will be called called Cantina Leña, meaning firewood in Spanish and should open early next month. Expect banana leaf-wrapped pork cooked in a 10-foot-long pit and house-made aqua fresca, melon seed horchata, and slushy margaritas served from a 10-seat bar.

'BUCKSWIRE -- A new Starbucks dress code implemented for baristas and retail employees earlier in October is causing quite a stir. The dress code gives the green light to visible tattoos and nose studs—but restricts wearing some jewelry, including engagement rings due to food safety rules. Watches, bracelets, and engagement rings with stones are now prohibited.

WESTLAKE -- Food & Wine Best New Chef and James Beard finalist Jason Franey is departing 63 year-old Seattle icon Canlis on December 1. He'll be moving to Monterey, California's Restaurant 1833. Meanwhile, Canlis is conducting a national search for a new chef, which it hops to bring on in early 2015.
