Veg-Focused Restaurant Planned for The Bindery Building

The prime corner spot will soon house a meat-free eatery.

A new veg-centric restaurant is going into the corner spot at The Bindery building on Northeast Sandy.

Called Harvest at The Bindery, the 44-seat restaurant will focus on organic, local, seasonal food, with a kitchen helmed by head chef Tia Murray, who specializes in wellness, nutrition, and plant-based cooking.

"It is vegan, but we're not labeling ourselves as such," says owner Jon Steuer. " We're keeping the focus on ingredients as local and near to us as possible."

This philosophy extends to the bar as well, where they plan to showcase local ingredients and spirits in their original cocktails. There will also be beer, wine, and a menu of fresh juices.

The decor will lean toward rustic-chic, with live-edge wood tables, custom-made signs cut out of 150-year-old barn wood, and antique farm tools hung on the walls.

Harvest at The Bindery will serve lunch and dinner, and the team will possibly add brunch later. They're aiming for a December opening, and hope to have their Facebook page and website up and running in the next week or two.

Although this is Steuer's first restaurant, he's no stranger to the service industry. The former actor and frontman of the band Soda Pop Kids has spent years behind the bar and on the floor at restaurants like Delta Cafe, Tube and East End. He was also a booking agent at Dante's.

"I've worked in the service industry for a long time," he says. "It's what I know and love. Opening a restaurant was a natural progression and something I've been planning and working toward for years. It's exciting to finally be nearing that goal."
