Let there be seats!
Kyra's Bake Shop, the pioneering gluten-free bakery in Lake Oswego formerly known as Crave Bakery, has moved around the corner from its original location, quadrupling its space in the process.
"We had 750 square feet before and now we have 3,200 square feet," says owner Kyra Bussanich. "It's a huge change for us."
The new location threw open its doors today at 6 a.m., greeting customers with a vibrant new color scheme and, most important, 35 seats from which they can sit and linger over savories and sweets from the woman who transformed the face of gluten-free baking. Bussanich is a three-time champion — and the only gluten-free champion — of the Food Network show Cupcake Wars, and is known for creating baked goods that fool even the most gluten-free-intolerant gluten-lovers.
All that space also translates into a bigger kitchen and an expanded menu offering cafe fare like soups, salads, quiche by the slice, and sandwiches made with house-made gluten-free bread. "We have twice the amount of pastry case room," says Bussanich. "And we'll have more savory stuff. One of my new favorite things is called a 'rollover.' It's bread dough stuffed with scrambled eggs and cheese."
Everything is gluten-free, of course, and some items are vegan or vegetarian. But the bakery is in soft-opening phase, which means the savory dishes aren't quite on the menu yet, but you can expect them within a couple weeks. "If we're really on top of things we'll have it available before Thanksgiving," says Bussanich.
There's also a beverage program featuring local producers: coffee and espresso drinks from Sisters Coffee Co., Nectar Creek Mead, Oregeon wines by the glass, 2 Towns Cider, and beer from Ground Breaker Brewing. Expect cocktails in the near future.
