In a new video on Skill Share, an online learning community where experts teach  everything from gaming to cooking, chef/restaurateur Andy Ricker gives a 43-minute lecture on how to properly recreate regional Thai cooking. Using anecdotes and tips gleaned from his own experiences over the years, Ricker explains the hows and whys of Thai cooking — and eating — in minute detail. It's not a cooking demo, it's more of a glimpse into the mind of a chef.

If you want to geek out on Asian food, watch the intro clip below. But you'll have to sign up for a free account to watch the remaining six clips (where all the good info is). And if you're really into it, you can use what you learned to complete a cooking assignment and enter to win a copy of Ricker's "Pok Pok" cookbook.
