The trio behind Oven & Shaker in the Pearl are teaming up again for a new venture. But this time they're swapping the pizza ovens for pork.
Portland Monthly reports that chef Cathy Whims, bartender Ryan Magarian and Chefstable's Kurt Huffman plan to open a cocktail bar with a ham-focused food menu around the corner from Oven & Shaker in the former Jinx Lounge space (232 NW 12th Ave.)
Whims will curate half a dozen hams from all over the world, including Spain, Italy and the South. The hams will be sliced by hand in front of customers, just like they do in Europe. The rest of the menu will be similarly wide-ranging, including Southern accompaniments like collard greens, pimiento cheese and biscuits, as well as Spanish bocadillos.
Meanwhile, Margarian's drink menu will focus on spirits and cocktails that complement the ham. The group hopes to open the still-to-be-named bar, which will be open in the evenings only, in March 2015.
