Over the next few weeks, the Pine State Biscuits team is making some important changes. Namely, cocktails.
"We're working on an all-new cocktails menu," says co-owner Brian Snyder. "We'll roll it out at every location."
The current list of brunchy bloody marys and simple rocks drinks will get an upgrade courtesy of Matt Mount, the former executive distiller at House Spirits who is now running Merit Badge, a craft cocktail catering company. Expect a new lineup focusing on local spirits and making good use of Raft syrups.
To go along with the drinks, Pine State's hours are getting streamlined. The SE Division Street location will finally introduce dinner hours while the NE Alberta Street location will scale theirs back, so that the result is both will stay open until 11 p.m. on Thursdays through Sundays. And Division's evening hours means they'll also be able to offer the same happy hour as Alberta — $5 cocktails and $2 off most biscuit sandwiches Thursdays through Sundays from 3 to 6 p.m. and 10 p.m. to closing.
As for "Pine State To Go," the take-away window inside their NE Schuyler commissary, evening hours will tie-in with Moda Center events starting in early 2015. But the bare bones location is also getting a few more improvements.
"By the end of the year we'll have more ambiance," says Snyder. "We'll have a heater in the dining area, we'll have music and TVs. We have been adding a bunch of bar stools so now there's about 20 or so seats. And we're in the process of getting our full liquor license. We'll start being able to do food and drink catering. We're ramping up all across the board."
