Chef David Anderson (Vindalho and Genoa) took over the reins at The Original in the fall of 2013. But this past September, Sage Restaurant group, owners of the upscale diner Downtown, tapped him to lead the kitchen at Second Home Kitchen and Bar at the JW Marriott in Denver.
The move left a big hole in The Original's kitchen, until now. The restaurant has finally named its new head chef: AJ Voytko. The Wyoming native cut his teeth in Southern California restaurants, including lauded Chive in San Diego. After moving to Portland, he worked at Three Degrees at the RiverPlace Hotel and, more recently, the Benson Hotel. He also ran a mobile paleo food cart called Knuckle Dragger that catered to the Cross-fit set.
Now that he's at The Original, he's intent on making more things in house, including brioche rolls, and burger buns. And he says he'll add a more seasonal approach to the menu.
