Young Alex McGillivray cut his teeth in the kitchens of Ping and Lardo, where he helped concoct sandwiches like the Pork Meatball Banh Mi and "The Beet Generation," which was his own creation.
But he recently decided to venture out on his own and focus on the humble French fry, opening the Fry Guy food truck in Sellwood Nov. 8.
Though he offers a solid-looking lineup of weekly sandwich specials and vegetable side dishes like roasted cauliflower tossed in chimichurri, and a fried kale salad with capers and lemon zaatar dressing, it's no surprise the hand-cut fries take center stage.
Fries come by the 1/4-pound or 1/2-pound order with a choice of sauces, or go all-in with one of smothered options, which range from traditional poutine to fries essentially topped with the innards of a Cubano sandwich (ham, coppa, swiss, pickles, and mustard).
