The pop-up only Holdfast Dining is currently one of Portland's toughest reservations, and at a recent Saturday-evening service, it's easy to see why. Chef Will Preisch's supper club takes over just 12 seats at Old Town's KitchenCru commissary space, and over nine courses, Preisch and chef Joel Stocks execute their creative, collaborative menu. Dishes like "salsify, cranberry, egg york, and black truffle" are plated and served over-the-counter to diners who can watch the whole menu unfold. Go, investigate an evening at Holdfast Dining.
