After announcing its closure just two months ago, popular lefse cart Viking Soul Food has reopened. Food Carts Portland brings word that VSF is back at SE Belmont's Good Food Here pod with limited hours. According to an announcement: "Our menu will change somewhat from years past, and our schedule will be contingent upon family needs. We will be making just 300 pieces of lefse every week.
