The Portland International Airport plans to offer more independent, local restaurants in the coming years, recently accepting bids from the likes of Stumptown Coffee, Pok Pok, and Bunk Sandwiches for potential leases. The Oregonian reports the Port of Portland hopes to offer dining options representative of "that neighborhood feel that Portland is known for," but "stringent" requirements may deter many successful concepts from actually opening a PDX airport location.
